Acid or Base? The Cabbage Water Experiment.
Red cabbage contains a chemical called anthocyanin. The chemical is blue in its neutral state - achieved as year 6 boiled their cabbage pieces. Anthocyanin will turn red when mixed with an acid such as vinegar and lemon juice, and a greenish colour when mixed with a base such as ammonia.
